Gratitude as a health supplement and turkey recipes

Renee Joy Dufault, PhD was an investigator for the FDA who discovered some very unsettling truths about mercury and other toxins in FDA supervised foods. Sadly, rather than being praised for her work protecting the public, she was forbidden to continue investigating! This story is told in the whistle blower’s book: Unsafe at Any Meal: What the FDA Does Not Want You to Know About the Foods You Eat. It contains, for example, shocking information about mercury in high fructose corn products and vegetable oils. The interview is a must for anyone interested in autism and ADD/ADHD or who wants to protect themselves from degenerative diseases and nerve damage. Her book also contains helpful information on testing for the body’s toxic load; how toxicants affect our genetics; how to decode labels; an eating guide; and lots of other resources. Two thoughts about this holiday.

1. Gratitude. It is good for your health to feel gratitude. It is also good for the health of those to whom you express thanks. Science has documented that being grateful benefits the immune system, blood pressure, sleep, stress, depression and likely a whole lot more. It is also FREE. We don’t need to wait for something grand like a raise in salary or a high honor. We can be grateful that the line was short at the grocery store (or that we live where we even have a grocery store); that we accomplished a nagging task (or a boringly simple one); or even that we made a satisfying contribution to the porcelain throne (or for that matter be grateful we have indoor plumbing). Thanksgiving is an organized time to give thanks, but we are better off if it is a daily (hourly) habit.

2. Turkey recipes. I used to use a slow / low temperature method that was remarkably easy and juicy. But, at one hour per pound, depending on the size of the turkey and the time that the feast was scheduled, I sometimes would have to put the bird in the oven at midnight. After we got an oven with electronic touch controls I always worried it might accidentally get turned off. (That recipe is still on the website along with some thoughts on thawing a frozen bird.) The last couple of years I have used Alton Brown’s Recipe. It is more sophisticated using brining and herbs, but roasts very fast and is still juicy and tender. Of course, I monkey with recipes (e.g. a little garlic in the brine) but I’m not sure it makes a difference.

I hope you have a wonderful holiday! I am really looking forward to quality time with my extended family and to some really good food that I don’t have to prepare (other than the turkey) at our potluck.)
