Fats and Oils
Fats have been in the news a lot lately. I’m so happy that I no longer feel like a voice in the wilderness campaigning for a more realistic view of fats in our diet. There is enough scientific data accumulated now that the truth can no longer be denied. It will take a lot more than I can put on a page on this website to explain why we need fat, how we got so off track blaming heart disease and obesity on it and how to balance anti-inflammatory omega-3 (e.g. fish oil) and pro-inflammatory omega-6 (e.g. soy oil). That is why I wrote the booklet: Fat Free Folly which one day I plan to reissue as an e-book.. Please do not fear fats. Learn to love how the good fats carry fat soluble vitamins and flavor, satisfy our hunger and benefit our overal health.
