Nutrition expert, Kim Bright teaches us about Fermentation and Kimchi

[notes like this were added by HBN host, Martie Whittekin]

Fermentation is an important health factor that most people’s nutrition regimen is dearly missing. When foods are fermented, the food molecules are broken down into more easily digestible and absorbable nutrients—[plus, new healing compounds called “postbiotics” are created]. Perhaps most importantly, a diet rich in fermented foods enhances the diversity of the all-important gut microbes (which are mainly bacteria) and decreases molecular signs of inflammation. The gut microbiome (the complete microbe population) greatly affects the immune system (70% of the immune system is in the gut) and overall health. According to scientific research, low microbiome diversity has been linked to obesity and diabetes.

Fermented foods, especially Kimchi (I’ll get to that below), do more for gut health than virtually any other supplement or diet change you can make. As Martie Whittekin, CCN wrote in The Probiotic Cure: Harnessing the Power of Good Bacteria for Better Health, gut health affects EVERY cell, organ and system of the body, including: metabolism, mental health (focus, memory and mood), even skin and hair as well as the immune system mentioned above. [As Martie points out in her book, a healthy balanced immune system not only protects us from pathogens and misbehaving cells, but also it does not get overly aggressive or confused as is the case with autoimmune conditions.]

Kimchi (fermented cabbage and spices) has been the king of fermented foods enjoyed for centuries in Asia. Kimchi is a rich source of vitamins, minerals, fiber and other nutrients. Fermentation makes kimchi’s nutrients more absorbable than if the same ingredients were consumed raw or cooked. You see, during the fermentation process, bacteria partially digest the foods thereby making their components readily accessible to your body. Kimchi also has unique elements and probiotic strains not available from any other source. Note: even if you think you’re taking all the right supplements for your health – you may not be absorbing all of them.

Kimchi has been shown to have powerful anti-aging properties. When scientists introduced kimchi to cells in a test tube, Kimchi was observed to slow the aging of cells including blood cells of any age. As we get older, our bodies start to show signs of degeneration. Of course, slowing aging is not simply a matter of vanity – it’s about improving our day-to-day quality of life:

  • Moving around more easily.
  • Having fewer aches and pains.
  • Increased overall energy.
  • Weight loss
  • In our April 26,2023 interview, Kim told us about this scientific study on Kimchi and hair regrowth. We also discussed the nutrients contained in Kimchi One: Vitamin K (important for protection against hardening of the arteries, kidney stones and osteoporosis), Choline, vitamin C, folate, beta carotene and potassium which are all better absorbed in this fermented form.
  • As a bonus, when we feel better, we look better too!

The benefits of Kimchi are experienced when it is consumed every day in a recommended serving of 100g. It is a challenge with Kimchi that while many people love the spicy cabbage flavor, others do not…at least not every day. Consuming the recommended amount of Kimchi daily was an issue. That is until Kim Bright developed Kimchi One—it provides the equivalent of 100 grams of Kimchi in only 3 easy to take capsules! (I opened a capsule and discovered that the contents, not surprisingly, tastes like Kimchi and so I sprinkled it on my dinner.)
